- 6 sheets filo pastry
- 1tablespoons olive oil cooking spray
- 1/3 cup reduced-fat fresh ricotta
- 125grams raspberries
- 1tablespoons maple syrup
Description
After a healthier snack to give the kids? Try these crispy filo pastry pinwheels with fresh raspberries and ricotta. Five ingredients is all you need.
Method
Step 1 of 3
Preheat oven to 200°C/180°C fan-forced. Line 2 baking trays with baking paper. Place 1 pastry sheet on a flat surface. Spray with oil. Top with another pastry sheet and spray with oil. Repeat with remaining pastry sheets and oil.
Step 2 of 3
Cut pastry stack into 8 even rectangles. Make diagonal cuts from corners of each stack to centre, leaving a 2cm gap in centre. Take corners and fold towards centre of each stack. Transfer to tray and spray with oil. Bake for 10 minutes or until golden and crisp. Allow to cool on tray.
Step 3 of 3
Top pinwheels with ricotta and berries, then serve drizzled with syrup.
