  • 2teaspoons honey
  • 1tablespoons rolled oats
  • 170grams light Greek-style yoghurt
  • 8 walnuts, , crushed
  • 2teaspoons sultanas

Combine carrot, apple, sultanas, honey, cinnamon and ginger in a bowl. Spoon one-third of the carrot mixture into 4 glasses. Top each glass with 1 tbs yoghurt. Repeat layering with carrot mixture and yoghurt, finishing with oats and walnuts.
