Description

This quick chicken and cashew stir-fry is perfect for an easy midweek dinner. The recipe calls for just four ingredients and it’s ready in 15 minutes.

Method

Step 1 of 4

Preheat oven to 200°C/ 180°C fan-forced. Roast cashews on a baking paper-lined baking tray for 8 minutes or until golden.

Step 2 of 4

Meanwhile, heat 1 tbs vegetable oil in a wok over high heat. Cook chicken for 3 minutes. Remove and set aside. Add sauce from chicken tray and 1/4 cup water and bring to the boil.

Step 3 of 4

Add vegetables and stir-fry for 2 minutes. Add chicken and cook for a further 4 minutes or until vegetables and chicken are tender.

Step 4 of 4

Heat rice according to packet instructions. Divide rice and stir-fry among bowls. Scatter over cashews and serve.
