7 Ingredients

  • 1/3 cup unhulled tahini
  • 1/4 cup rice malt syrup
  • 1teaspoons vanilla bean paste
  • 2 cups puffed rice
  • 1 cup Macro seed mix with pepitas & sunflower seeds
  • 1/2 cup currants
  • 3/4 cup black & white chia seeds

Description

These bars are nutritionally approved for kids and ideal for school lunchboxes. Make a batch on the weekend for the kids to enjoy throughout the week.

Store bars in an airtight container in the fridge.

Method

Step 1 of 4

Grease a 20cm (5cm deep) square cake pan. Line base and sides with baking paper.

Step 2 of 4

Place tahini, syrup, vanilla and 1/4 cup water in a large saucepan. Whisk well to combine. Bring to the boil over medium-high heat. Reduce heat to medium and simmer, uncovered, for 3 minutes or until thickened. Remove pan from heat.

Step 3 of 4

Add puffed rice, seed mix, currants and chia seeds, then stir until combined. Press mixture over base of pan to compact. Freeze for 1 hour or until set.

Step 4 of 4

Cut into 12 bars and serve.
