Description

Add more treats to your Halloween spread with these kid-friendly pumpkin and thyme crackers. They're nutritionally approved and so easy to make.

Method

Step 1 of 6

Preheat oven to 200°C/180°C fan-forced. Line 2 baking trays with baking paper.

Step 2 of 6

Place two-thirds of the pumpkin in a microwave-safe bowl. Microwave, covered, on high for 2 minutes or until tender. Using a fork, mash pumpkin until almost smooth (you should have 1/2 cup pumpkin puree).

Meanwhile, place 2 cups oats in a food processor and process until a flour-like consistency forms.

Step 4 of 6

Place pumpkin puree, remaining pumpkin, thyme, mustard and egg in a large bowl and stir, using a wooden spoon, to combine. Stir in oat flour and remaining oats, then use your hands to bring dough together. Roll dough between 2 sheets of baking paper until 5mm thick.

Using an 8cm Halloween cutter, cut shapes from dough and place 3cm apart on trays. Re-roll scraps and repeat process to make a total of 20 crackers.

Step 6 of 6

Bake for 15 minutes or until just golden on the edges. Allow to cool on trays for 10 minutes, then transfer to a wire rack to cool completely. Store in an airtight container until ready to serve.
