- 1kilograms watermelon, cubed
- 2tablespoons mint (to serve)
- 1 small fennel bulb, thinly shaved
- 1 lemon, 2 tsp juiced (for dressing)
- 2tablespoons verjuice (for dressing)
- 800grams cooked tiger prawns, peeled, deveined, tails intact
- 2tablespoons olive oil for dressing
- 2tablespoons dill sprigs (to serve)

Method
Step 1 of 3
Divide watermelon cubes, fennel and prawns among serving plates. Top with fennel or dill and mint leaves.
Step 2 of 3
For the dressing, combine all the ingredients in a screw-top jar. Season with salt and freshly ground black pepper. Shake until well combined.
Step 3 of 3
Pour the dressing over the salad just before serving.
