  • 3 cloves garlic, peeled and finely chopped
  • 2tablespoons olive oil
  • 2 medium red onions, peeled and diced
  • 1/2teaspoons chilli flakes
  • 800grams chopped tomatoes, canned
  • 2/3 cup white wine, dry
  • 75grams black olives, pitted and halved
  • 60grams feta, crumbled
  • 1 bunch parsley, fresh, chopped

Description

This traditional Greek prawn stew is a little taste of the med.

Method

Step 1 of 3

Heat the oil in a large pan on medium high heat and cook the onions for 5 minutes to soften, add the garlic and chilli flakes and cook for 1 minute.

Step 2 of 3

Pour in the tomatoes and wine and bring to the boil, reduce the heat and simmer gently for 10 minutes. Stir in the prawns, olives and half of the parsley and cook for 2 minutes, until the prawns are pink.

Step 3 of 3

Scatter crumbled feta and the remaining parsley on top and serve with lemon wedges and crusty bread, if desired.
