  • 2 medium lobster tails, split in half lenghtways and sinue removed
  • 4tablespoons butter
  • 1 medium lemon, juice and zest
  • 160grams mixed salad leaves, washed and drained
  • 1tablespoons olive oil
  • 1tablespoons balsamic vinegar
  • 8 medium baby tomatoes, halved
  • 1 small red onion, peeled and finely sliced

Description

The tangy and sharp lemon flavours in this dish compliment the smoky lobster meat.

Method

Step 1 of 6

Heat up your BBQ.

Step 2 of 6

Combine the butter with the juice and zest of the lemon.

Step 3 of 6

Spread the lemon butter oven the meat inside the lobster tails and place in the BBQ.

Step 4 of 6

Allow to cook for 12 minutes or until the lobster is cooked fully.

Step 5 of 6

In a serving bowl, combine the salad leaves with the onion, tomatoes oil and balsamic and set aside.

Step 6 of 6

Once the lobster is cooked, remove from the BBQ and serve with the garden salad.
