  • 1 head baby cos lettuce, leaves separated
  • 1/3 qty Fragrant pork larb

  • 1/4 cup Vietnamese salad dressing
  • 2tablespoons Woolworths roasted unsalted peanuts, roughly chopped
  • 1 lime, cut into cheeks

Description

Use a base of pre-made fragrant pork larb, add some delicious fresh veggies and slurpy noodles, and delight in a mid-week dinner that's speedy and tasty.

Cool larb, then transfer to an airtight container and label. Store in the fridge for up to 3 days or freezer for up to 1 month. To use, thaw in the fridge overnight.

Cook noodles according to packet instructions. Drain and refresh under cold water.

Arrange lettuce and noodles among 4 serving plates. Top with larb, coriander, onion, cucumber and carrot. Drizzle with dressing and sprinkle with peanuts. Serve with lime.
