- 200grams thin rice noodles
- 1 head baby cos lettuce, leaves separated
- 1/3 qty Fragrant pork larbingredient tip
- 1 Lebanese cucumber, thinly sliced
- 1 large carrot , cut into matchsticks
- 1/4 cup Vietnamese salad dressing
- 2tablespoons Woolworths roasted unsalted peanuts, roughly chopped
- 1 lime, cut into cheeks
Description
Use a base of pre-made fragrant pork larb, add some delicious fresh veggies and slurpy noodles, and delight in a mid-week dinner that's speedy and tasty.

Storage tip:Cool larb, then transfer to an airtight container and label. Store in the fridge for up to 3 days or freezer for up to 1 month. To use, thaw in the fridge overnight.
Method

Cook noodles according to packet instructions. Drain and refresh under cold water.
Step 2 of 2
Arrange lettuce and noodles among 4 serving plates. Top with larb, coriander, onion, cucumber and carrot. Drizzle with dressing and sprinkle with peanuts. Serve with lime.
