- 1 1/2tablespoons vegetable oil
- 800grams Woolworths pork mince
- 2 red onions
- 3 cloves garlic, crushed
- 4centimeters piece ginger, finely grated
- 420grams Woolworths no-added-salt lentils, rinsed, drained
- 2tablespoons fish sauce
- 2tablespoons Woolworths sweet chilli sauce
- 1 lime, juiced
- 1/2 bunch coriander, leaves picked
- 1tablespoons fried shallots
Description
Cook up a batch of this fragrant pork larb, then use it to create three other meals. A little forward planning takes the hassle out of midweek dinners.
Method
Step 1 of 3
Heat a wok over high heat. Add 1 tbs oil. Swirl to coat. Add half of the mince. Stir-fry mince for 5 minutes or until browned. Transfer to a bowl, draining excess fat. Repeat with remaining mince.
Step 2 of 3
Finely chop 1 onion. Add remaining oil to wok. Stir-fry garlic, ginger and chopped onion for 30 seconds. Return mince to wok. Add lentils, fish sauce, sweet chilli and lime juice. Stir-fry for 5 minutes. Finely chop half of the coriander. Add chopped coriander to wok. Cook for 1 minute. Remove mince mixture from heat.
Step 3 of 3
Slice remaining onion. Serve mince mixture topped with remaining coriander, remaining onion and shallots.
