  • 1/2 bunch coriander, roots trimmed
  • 1 jalapeño, roughly chopped
  • 2 cloves garlic, roughly chopped
  • 1 lime juiced
  • 1 lime zested
  • 1/2teaspoons Woolworths cumin seeds, toasted
  • 1/3 cup extra virgin olive oil

Description

This spicy, zesty marinade is a simple way to give your favourite protein an extra boost of flavour at dinner. Perfect for chicken, fish, tofu or pork.

Cooking tip:
Marinate chicken, beef steak, prawns and fish fillets in the fridge for as few as 10 minutes and as long as 4 hours or overnight. Freeze and store marinated meat for up to 1 month.

Method

Step 1 of 3

Blitz coriander, jalapeño, garlic, zest and juice in a small food processor until chopped.

Step 2 of 3

Transfer to a bowl and add cumin seeds and oil. Season well.

Step 3 of 3

Use to marinate beef steak, chicken thighs or raw green prawns.
