  • 85grams dangmyeon (Korean glass noodles)

  • 2teaspoons sugar
  • 40 dumpling wrappers, use large circle ones, about 12 cm in diameter

Description

These Korean dumplings are worth the effort. You can serve them different ways - pan fried, deep fried, steamed or dropped in a soup.

Method

Step 1 of 4

In a bowl, sprinkle the salt on the napa cabbage and let it sit for 10 minutes. Squeeze out the cabbage to get rid of moisture. Cooked noodles according to package instructions, rinsed in cold water, drained and chopped finely.

Step 2 of 4

Put the pork, cabbage, green onion and noodles in a bowl. Season with soy sauce, sesame oil, ginger and sugar. Mix thoroughly by hand until well incorporated.

Step 3 of 4

Get a heaping tablespoon of the filling and put it in the middle of the wrapper. Wet the edges of the wrapper with water, fold it in half and pinch the edges together. Bring the ends toward the center and pinch them together.

Step 4 of 4

To serve, steam the dumplings for 5 minutes and serve with a dipping sauce made up of 2 parts soy sauce and 1 part vinegar. Add a bit of Korean chilli flakes if you like it spicy.
