Chicken marinade
- 1 lemon, juiced, zested (medium)
- 1 lime, juiced, zested (medium)
- 1 clove garlic, crushed
- 1teaspoons ginger, grated
- 1teaspoons fish Sauce
- 1/2 stalk lemon Grass, crushed
- 1tablespoons light soy sauce
- 1teaspoons sugar
- 8 sheet Mountain Bread™
- 50grams bean sprouts
- 1 small carrot, sliced julienne
- 2 spring onion, finely sliced lengthways
- 2 chicken thighs
- 8 leaves mint leaves, sliced in halves (large)
- 1/4 cup vegetable oil
Method
Step 1 of 5
Combine all marinade ingredients together and cover the chicken. Marinate for approx. 2 hours, then slice the chicken into very thin strips and set aside.
Step 2 of 5
Lay out the Mountain Bread™ and on one edge
spread some bean shoots, then top with carrot,
spring onion, two mint halves and finish
with 2 chicken strips.

Brush the edges with a little
water and tightly roll, ensuring the ends are folded
as well.
Step 4 of 5
Heat the oil in a pan and slowly shallow fry on
a low to medium heat until chicken is cooked. Turn
frequently to ensure the bread doesn’t burn.

Serve with sweet chilli dipping sauce.
