  • 1 clove garlic
  • 2teaspoons sesame oil
  • 32 green prawns
  • 1tablespoons fish sauce
  • 1 long red chilli
  • 1/2 bunch coriander
  • 1/2 bunch mint
  • 1 French shallot
  • 1 1/2tablespoons rice vinegar
  • 1tablespoons lime juice
  • 1 lime, to serve
  • 1 1/2tablespoons lime juice
  • 2tablespoons reduced-salt soy sauce
  • 1/2 bunch dill
  • 2 kaffir lime leaves
  • 1tablespoons caster sugar
  • 1tablespoons caster sugar
  • 2 gem lettuce

Method

Step 1 of 5

Combine soy sauce, sugar, oil and lime juice in a non-reactive bowl. Add prawns and toss to coat. Set aside for 15 minutes to marinate.

Meanwhile, combine herbs and shallot in a serving bowl and set aside.

To make the chilli dipping sauce, combine 1 1/2 tbs rice vinegar, 1 1/2 tbs lime juice, 1 tbs fish sauce, 1 tbs caster sugar, 1 long red chilli (finely chopped), 1 garlic clove (finely chopped), 2 kaffir lime leaves, finely sliced with 1 tbs water in a bowl. Stir to dissolve sugar and set aside.

Preheat a barbecue grill or chargrill pan on medium-high heat. Remove prawns from marinade and discard marinade. Cook prawns for 2 minutes on each side or until golden. Transfer to a platter.

Serve prawns with lettuce, herb salad, lime wedges and dressing.
