- 2 long green chillies, finely chopped
- 1 garlic, finely chopped
- 1tablespoons palm sugar, grated
- 2tablespoons lime juice
- 2tablespoons fish sauce
- 2tablespoons rice wine vinegar
- 1/4 cup coriander, finely chopped
- 500grams natural rock salt
- 12 fresh Pacific oysters, on half shell
- 1 lime, wedges (to serve)
Description
Go all out with oysters in a delicate Vietnamese dressing of lime, chili and fish sauce. This recipe has the perfect balance of flavours and is sure to impress.
Method
Step 1 of 2
Combine chilli, garlic, sugar, lime juice, fish sauce, vinegar and coriander in a small bowl.
Step 2 of 2
Preheat oven grill to high. Place salt on a baking tray or heatproof platter. Arrange oysters on salt, then grill for 1 minute. Spoon over dressing and serve immediately with lime cheeks.
