Mini Peking Duck Pancakes With Plum Sauce

- 1teaspoons runny honey
- 1teaspoons light soy sauce
- 1 duck breast, skinned
- 4centimeters fresh ginger
- 2 spring onions
- 1/2 cucumber, halved and seeded
- 20 long chives
- 10 ready-made Chinese pancakes
- 2tablespoons plum sauce
Description
Taste these when you are assembling them to check that there is enough ginger, as it really brings out the flavour of the other ingredients.
Method
Step 1 of 4
Preheat oven to 200˚C.
Step 2 of 4
Combine the honey and soy. Brush the duck with the honey soy mixture. Roast duck until browned but still pink and juicy inside, 10 minutes.Cool. Slice duck breast diagonally into 0.5cm thick slices.

Cut the ginger, spring onions, and cucumber into julienne strips.
Step 4 of 4
Cut pancakes in half. Trim a 0.5cm strip from the round edge of each pancake half to make 20 straight sided pieces. Spread 1/4 tsp plum sauce in the centre of each piece. Divide duck slices and julienne strips among pancake strips. Roll up tightly and tie with a chive. Serve at room temperature.
