  • 1/3 cup reduced-salt soy sauce
  • 2teaspoons light soy sauce
  • 2teaspoons Chinese cooking wine
  • 1/2teaspoons caster sugar
  • 110grams can water chestnuts, rinsed, drained, finely chopped

Method

Step 1 of 6

To make the dipping sauce, combine ingredients in a bowl, stirring until sugar dissolves.

Step 2 of 6

Combine prawn, water chestnut, spring onion, ginger, cooking wine, soy sauce, oil, sugar and cornflour in a bowl. Cover and chill for 30 minutes or until firm.

Line a large tray with baking paper lightly dusted with extra cornflour.

Step 4 of 6

Working in batches, lay wrappers on a clean work surface. Place a rounded teaspoon of mixture in the centre of each wrapper. Moisten edges of wrappers with a little water. Fold in half to enclose filling and squeeze edges to seal, ensuring to remove all air pockets. Fold sealed edges of the wontons back in on themselves. Bend wontons, moisten corners and press together to join. Place on tray, ensuring they don't touch. Repeat with remaining wrappers and filling.

Bring a large saucepan of water to the boil over high heat. Add half the dumplings, swirling the water to prevent them from sticking. Return to the boil, reduce heat to a simmer and cook for 4-5 minutes. Transfer dumplings to a bowl, using a slotted spoon. Cover with foil to keep warm. Repeat with remaining dumplings.

Serve dumplings immediately with dipping sauce.
