  • 1 cup milk
  • 40grams butter, melted
  • 60grams butter, extra
  • 2 bananas
  • 1/3 cup pecans, roughly chopped
  • 1/4 cup maple syrup
  • 1teaspoons vanilla extract
  • 3 eggs
  • 1/3 cup brown sugar
  • 1tablespoons caster sugar
  • 1 cup cottage cheese

Method

Step 1 of 3

Beat cottage cheese, milk, eggs, sugar and vanilla with electric beaters until combined. Place flour into a large bowl. Make a well in centre and slowly add cottage cheese mixture, whisking until a smooth, thick batter forms.

Heat a non-stick frying pan over medium heat. Grease pan with a little butter. Pour 1/4 cup of batter into frying pan and spread to form a 12cm pancake. Cook 2-3 pancakes at a time. Cook for 1 minute or until small bubbles appear. Turn and cook for 30 seconds or until golden and cooked through. Transfer to a plate and cook remaining batter.

Step 3 of 3

Cut bananas into long diagonal slices. Melt extra butter with sugar and maple syrup in a frying pan. Bring to simmer, add banana and cook for 2 minutes each side or until golden. Simmer for 2 minutes. Serve pancakes topped with banana and caramel sauce. Sprinkle with pecans.
