Description

These divine Easter eggs inspired by the flavours of an Oreo cheesecake are egg-cellent treats for gifting or serving for dessert.

Method

Step 1 of 5

Place cookies in a food processor and process until they resemble fine breadcrumbs. Reserve 1¼ cups cookie crumbs.

Step 2 of 5

Place cookie crumbs and cream cheese in a large bowl and mix well to combine. Refrigerate for 1 hour or until firm enough to roll.

Step 3 of 5

Roll heaped teaspoonfuls of mixture into egg shapes to make a total of 30. Transfer to a baking paper-lined baking tray. Freeze for 30 minutes or until slightly firm.

Step 4 of 5

Place chocolate in a medium microwave-safe bowl. Microwave, uncovered, on medium for 1 minute 30 seconds, stirring after every 30 seconds with a metal spoon, or until melted and smooth.

Step 5 of 5

Place reserved cookie crumbs in a shallow bowl. Using 2 forks, dip each egg into chocolate, allowing excess to drain off, then roll in cookie crumbs to coat. Return to tray. Refrigerate for 30 minutes or until set. Serve.
