- 125grams fresh raspberries
- 300grams dark chocolate, chopped
- 1 cup caster sugar
- 15 traditional fruit hot cross buns

Method
Step 1 of 3
Place dark chocolate in a medium microwave-safe bowl and microwave in 30-second bursts, stirring in between, or until melted. Use some of the melted chocolate to secure hot cross buns in a tower shape on top of a serving plate, with crosses facing outwards. Drizzle remaining melted chocolate over bunembouche.
Step 2 of 3
Dissolve caster sugar in 1/4 cup water in a small saucepan over medium heat. Bring to the boil, stirring, then reduce heat to low and simmer for 8 minutes or until mixture is a rich caramel colour. Dip two forks held back-to-back in toffee, then wave forks back and forth around bunembouche, wrapping around any stray strands.

Serve garnished with raspberries, candy and Easter eggs.
