  • 2 chocolate mud cakes
  • 200grams dark chocolate, melted
  • 1 wooden skewer, cut in half
  • 2 crown mints
  • 2 tub chocolate frosting
  • 1 strawberry cloud lolly

Method

Step 1 of 4

To make the chocolate reindeer antlers, draw antlers approximately 10cm long on a piece of baking paper. Transfer melted chocolate to a piping bag (or ziplock bag with corner snipped) and pipe the outline of the antlers before filling in with extra chocolate. Place the ends of wooden skewers into melted chocolate at the base of the antlers. Pipe a small dot of melted chocolate onto the mints to create eyes. Refrigerate antlers and eyes until ready to serve.

Step 2 of 4

To layer and fill the cakes, place the first cake onto a large, flat serving plate (or cake board) icing-side up. Using a bread knife, slice off the top of the cake to make it level. Place approximately 1/2 tub of the icing on top of the cake. Using a spatula, spread the icing to the edges. Level the second cake and place it on top of the prepared cake, pressing it down gently.

Use the remaining icing to cover the outside of the cake, using a spoon to lift the surface of the icing to create peaks for fur.

Step 4 of 4

Just before serving, gently press on the mint eyes and carefully press in the skewers of the chocolate antlers on the top of the cake. Press on a strawberry lolly for the nose.
