- 20-24 sponge fingers
- 3/4 cup orange juice
- 2tablespoons Grand Marnier
- 2 large eggs, separated
- 25grams icing sugar, sifted
- 500grams mascarpone
- 1 orange, finely grated zest
- 75grams orange-flavoured chocolate, finely grated
Description
This clever twist on traditional tiramisu combines the winning combination of chocolate and orange with creamy mascarpone and soaked sponge.
Method
Step 1 of 3
Arrange the sponge fingers in the base of a shallow 2-litre serving dish. Drizzle with the orange juice and Grand Marnier or Cointreau and set aside while the biscuits soak up the liquid.
Step 2 of 3
Put the egg yolks and icing sugar in a large bowl and beat with a wooden spoon until smooth and creamy. Beat in the mascarpone until smooth. Put the egg whites in a mixing bowl and whisk with an electric hand whisk until soft peaks form. Fold into the mascarpone mixture, along with the orange zest.
Step 3 of 3
Pour the mixture over the sponge fingers and smooth the top. Cover and chill for at least 4 hours or overnight. To serve, decorate with the grated chocolate.
