  • 100grams sponge fingers
  • 2teaspoons Kahlua
  • 3-pus 1 tsptablespoons Irish cream liqueur
  • 250grams ricotta
  • 50grams caster sugar
  • 2 medium egg, separate yolks and whites
  • 20grams milk chocolate, grated or shards
  • 1/3-plus 1 tsp cup espresso coffee, strong coffee and cooled

Description

An Irish take on a classically Italian dessert.

Method

Step 1 of 5

Combine the espresso with the kahlua and set to one side.

Step 2 of 5

In a mixing bowl, beat the egg whites until stiff and slowly add the sugar and egg yolks whole still mixing.

Step 3 of 5

Add the cheese and Irish cream and fold until fully combined.

Step 4 of 5

Now at the base of your serving dish place some of the sponge, drizzle some coffe mix, then add some cheese mix.

Step 5 of 5

Repeat the above layering process again on top of each and then garnish with chocolate shards. Allow to set and cool in teh firdge 2 hours before serving.
