  • 600milliliter thickened cream, softly whipped
  • 1kilograms block cream cheese, chopped and softened
  • 3/4 cup marsala
  • 600grams sponge finger biscuits, halved crossways
  • 1-2tablespoons cocoa (for dusting)
  • 450milliliter black coffee
  • 400grams dark baking chocolate, coarsely grated
  • dark chocolate (for making decorative curls)
  • 1/2 cup caster sugar
  • 450grams milk chocolate melts, melted and cooled slightly

Method

Step 1 of 6

Beat the cream cheese and sugar with an electric mixer until just combined. Mix in the chocolate and then fold through the cream. Set aside.

Step 2 of 6

Combine the coffee and Marsala in a shallow dish; allow to cool slightly.

Step 3 of 6

Dtip some biscuit pieces in and out of the coffee then arrange a layer in the base of a 4 litre-serving bowl.

Step 4 of 6

Spoon over some of the cream cheese mixture and then sprinkle with some of the grated chocolate. Repeat twice.

Step 5 of 6

Finish with a final layer of dipped biscuits then spread over the remaining cream cheese mixture.

Step 6 of 6

Sift the cocoa over the top and chill until required. Decorate with chocolate curls prior to serving.
