  • 750grams smooth ricotta
  • 3/4 cup caster sugar
  • 250grams mascarpone
  • 1 1/2 cup strong black coffee, cooled
  • 1/3 cup Marsala wine
  • 30 Savoiardi sponge fingers
  • 3 ripe yellow peaches, destoned, 2 thinly sliced, 1 thickly sliced
  • 1/3 cup blanched hazelnuts, toasted, coarsely chopped
  • 2tablespoons cocoa powder (to serve)

Description

Take a classic, easy tiramisu recipe and add the delicious flavour combo of peach and hazelnut to create a dessert that's sure to become a new favourite.

Method

Step 1 of 4

Place ricotta and sugar in a large bowl and hand whisk until smooth. Add mascarpone and whisk until soft peaks just form, being careful not to over-whisk.

Step 2 of 4

Combine coffee and wine in a shallow dish. Using half the biscuits, dip them, one at a time, in coffee mixture, turning to coat. Arrange biscuits in a single layer in base of a 18 x 28cm (7cm deep) rectangular baking dish. Top with half of the thinly sliced peach, scatter over 1 tbs hazelnuts and spoon over half the ricotta mixture, smoothing over peach layer to cover.

Step 3 of 4

Repeat with remaining coffee mixture, biscuits, thinly sliced peach, 1 tbs hazelnuts and ricotta mixture. Cover and refrigerate for 4 hours.

Step 4 of 4

To serve, sprinkle over cocoa, and top with thickly sliced peach and remaining hazelnut.
