- 2 sheets frozen puff pastry, partially thawed
- 1/2 cup apricot jam
- 1tablespoons cornflour
- 3 ripe white nectarines, halved, destoned, thinly sliced
- 300grams fresh cherries, halved, pitted
- 1 free range eggs, lightly beaten
- 2teaspoons raw sugar
- vanilla ice-cream (to serve)
Description
A dessert recipe that's sure to impress at both picnic lunches and dinner parties, try this luscious galette featuring nectarines and cherries.
Method
Step 1 of 3
Preheat oven to 220°C/200°C fan-forced. Line a large baking tray with baking paper.
Step 2 of 3
Stack pastry sheets on top of each other on a flat surface. Using a rolling pin, roll pastry sheets out to form a 35cm square. Place on baking tray.
Step 3 of 3
Combine jam and cornflour in a bowl, then add nectarine, tossing to coat. Leaving a 6cm-border, spoon nectarine mixture over pastry. Scatter cherries over nectarine. Pleat and fold pastry border up and around fruit, then brush border with egg. Sprinkle over sugar and bake for 30 minutes or until golden. Serve with ice-cream.
