  • 2 cup thickened cream
  • 300milliliter milk
  • 120grams butter, softened
  • 2 1/2tablespoons cocoa powder
  • 1/2 cup Baileys Irish cream liqueur
  • 1/2 cup instant coffee powder
  • 2 gluten free vanilla cake mixes
  • 8 free range eggs
  • 2/3 cup caster sugar
  • 500grams mascarpone

Method

Step 1 of 5

Prepare and cook cake mixes according to packet instructions, using 4 eggs, butter and milk. Cool in cake pans.

Meanwhile, separate remaining eggs. Place egg yolks and sugar in the bowl of a stand mixer and whisk for 6 minutes or until mixture is thick and pale. Add mascarpone and cream and whisk until combined. Transfer mixture to a large bowl and set aside.

Clean mixer bowl and whisk, and dry well. Add egg whites and whisk to stiff peaks. Gently fold egg white into mascarpone cream, in batches, until combined. Chill.

Step 4 of 5

Dissolve coffee powder in 2 cups boiling water. Stir in liqueur. Halve cakes horizontally. Place one layer, cut side up, into base of a 3.5-litre glass dish. Spoon over a quarter of the coffee mixture and dust with 2 tsp cocoa. Top with a quarter of the mascarpone mixture and smooth surface. Repeat with remaining cake, coffee, cocoa and mascarpone mixture.

Chill for 2 hours or overnight to set slightly. To serve, dust with remaining cocoa.
