  • 200grams Solanato tomatoes, halved
  • 25grams parmesan, shaved (to serve)
  • 1/4 bunch basil, leaves picked (to serve)

Description

Fancy a gourmet seafood pasta in just 25 minutes? Try this light and tasty spaghetti recipe with tender squid, blistered Solanato tomatoes and fresh basil.

Method

Step 1 of 4

Place stock in a large, deep, heavy-based frying pan and bring to the boil over medium-high heat.

Step 2 of 4

Break spaghetti in half, then add to pan and stir to combine. Return to a simmer, then reduce heat to medium. Cook, uncovered for 12 minutes, stirring occasionally, or until spaghetti has absorbed almost all of the stock and is tender.

Step 3 of 4

Stir in squid and tomato, then cook for 2 minutes or until squid is just cooked through.

Step 4 of 4

Divide spaghetti mixture among bowls. Top with parmesan and basil, then season with pepper. Serve.
