  • 500grams chicken breast fillets, thinly sliced
  • 35grams taco seasoning mix
  • 1 avocado, halved, deseeded, chopped
  • 1/2 cup light sour cream
  • 1/4 bunch coriander, sprigs picked
  • 10 mini flour tortillas, warmed (to serve)

Description

After a simple one-pan meal? Give this Mexican chicken recipe a whirl. Everything is cooked in the one frying pan, making for a brilliant no-fuss dish.

Method

Step 1 of 3

Heat half the oil in a large, deep frying pan over medium-high heat. Cook onion and capsicum, stirring, for 10 minutes or until tender. Transfer to a bowl and set aside.

Step 2 of 3

Heat remaining oil in same pan over medium-high heat. Place chicken in a bowl. Sprinkle with seasoning, then toss to coat. Cook chicken, turning, for 5 minutes or until browned and cooked through.

Step 3 of 3

Add onion mixture to pan and stir to combine. Top with avocado, sour cream and coriander. Season and serve with tortillas.
