  • 1 cup halved cherry tomatoes
  • 1 pinch Pepper
  • 150milliliter white wine (dry)
  • 1.60kilograms free range bone in chicken pieces with skin (or chop up a whole chicken)
  • 1/4 cup whole green Sicilian olives
  • 3tablespoons Monini Classico Extra Virgin Olive Oil
  • 180grams buffalo mozzarella balls
  • 1 cup basil leaves
  • 4 cloves garlic, in skin

Method

Step 1 of 7

Preheat oven to 180°C.

Step 2 of 7

Place chicken pieces, olives, tomatoes and garlic in a baking dish with a fitted lid.

Step 3 of 7

Pour over the wine and extra virgin olive oil. Season, and toss to combine.

Step 4 of 7

Spread in a snug single layer, place the lid on and bake for 30 minutes.

Step 5 of 7

Remove the lid and bake for another 30 minutes or until chicken is golden.

Step 6 of 7

Tear the mozzarella and basil over the chicken just before serving.

Step 7 of 7

Serve with simple green salad and sourdough bread to mop up the delicious sauce.
