  • 1/3 cup fresh pineapple
  • 2 spring onions (finely sliced)
  • 75grams Swiss brown mushrooms (thinly sliced)
  • 2 slices smoked ham (torn)
  • 2tablespoons barbecue sauce (to serve)
  • 5milliliter extra virgin olive oil spray
  • 1 crusty baguette
  • 2/3 cup traditional tomato pasta sauce
  • 1/4 cup pitted green olives (sliced)
  • 2 cup shredded pizza cheese
  • 12 slices pepperoni
  • 1 rasher streaky bacon (sliced)

Method

Step 1 of 5

Preheat grill to 220°C. Line a large baking tray with foil.

Step 2 of 5

Cut baguette in half lengthways, then halve each to make 4 pieces. Place, cut-sides up, on tray. Toast under grill for 3-4 minutes or until lightly toasted.

Step 3 of 5

Spread each base with 2 tbs pasta sauce and top with 1/4 cup cheese. Top 2 of the bases with mushroom, pineapple and olives. Top remaining bases with spring onion, ham, pepperoni and bacon. Sprinkle all bases with 2 tbs remaining cheese. Spray lightly with oil.

Grill for 5 minutes or until cheese has melted and is golden brown around the edges.

Step 5 of 5

Scatter basil over mushroom bases and drizzle barbecue sauce over bacon subs. Cut into slices and serve hot.
