Crunchy Chicken Waffle Stacks

Smoky Maple Butter
- 30grams salted butter
- 1/2teaspoons smoked paprika
- 2teaspoons maple syrup
- 1 small apple, cored (thinly sliced)
- 1 lemon (wedges)
- 1 1/2 cup fine cut coleslaw
- 1tablespoons apple cider vinegar
- 220grams light & buttery round waffles
- 24 frozen chicken breast crunchy bites

Step 1 of 5
Preheat oven to 200°C. Line a baking tray with baking paper.
Step 2 of 5
Spread chicken on tray in a single layer. Bake, turning over halfway, for 15 minutes or until crisp.

Meanwhile, to make the smoky maple butter, melt butter in a small saucepan over low heat. Add paprika and stir for 30 seconds or until toasted and fragrant. Whisk in maple syrup and remove from heat. Set aside.

In a bowl, toss coleslaw with apple and vinegar. Set aside.
Step 5 of 5
Toast waffles and place on a serving platter. Top each with slaw mixture and hot chicken bites. Drizzle over maple butter and serve immediately with lemon wedges.
