For the marinade
- 1/2 cup canned coconut milk
- 1/4teaspoons salt
- 1/2tablespoons oil
- 4 lemongrass stalks
- 1tablespoons curry powder
- 4 cloves garlic, chopped
- 1 fresh ginger, 5 cm piece, chopped
- 1tablespoons soft brown sugar
- 2 shallots, chopped
- 15grams coriander
- 4tablespoons fish sauce
- 2 boneless skinless chicken breasts
- 1/4teaspoons freshly ground black pepper
Description
These chicken skewers are packed so full with succulent flavours that theywill become an all-time party favourite.
Method
Step 1 of 4
Cut the chicken into 20 cubes.
Step 2 of 4
For the marinade, remove and discard the tough outer skin from the lemongrass stalks and finely chop. Place lemongrass, curry powder,garlic, ginger, sugar, shallots, coriander, fish sauce, coconut milk,and salt and pepper in a food processor or blender; pulse until smooth.
Step 3 of 4
Toss chicken and marinade together in a non-metallic bowl to coat each piece well. Cover and refrigerate for at least 1 hour.

Thread 1 chicken cube on to each presoaked skewer. Preheat grill. Alternatively, preheat a heavy frying pan with oil. Either grill or fry chicken sticks until cooked through, 5 minutes on each side. Serve hot, warm, or at room temperature.
