  • 8 fresh scallops, halved
  • 1tablespoons olive oil
  • 1 lemon, juice only
  • 1 pinch salt
  • 1 pinch freshly ground black pepper
  • 8 slices Parma ham, halved

Method

Step 1 of 3

If using wooden skewers, soak them in cold water for 30 minutes. Preheat the oven to 190°C (Gas 5). Mix the scallops with the oil and lemon juice, and season with salt and black pepper.

Step 2 of 3

Wrap each scallop half in a piece of Parma ham, then thread onto metal or wooden skewers. You’ll probably need 2 scallop halves on each skewer, depending on how big they are.

Step 3 of 3

Lay the skewers on a baking sheet, and roast in the oven for 5-8 minutes until the ham starts to crisp. Serve hot with a wild rocket leaf garnish.
