  • 1/3 cup parmesan, grated
  • 100grams prosciutto
  • 5milliliter canola cooking spray
  • 2tablespoons mayonnaise
  • 15 slice bread
  • 1/2 cup chives, finely chopped
  • 100grams rare roast beef
  • 170grams can crab meat

Method

Step 1 of 4

To make the spoons, trim crusts from 15 slices of bread (1 slice makes 2 spoons). Roll out until thin. Using a small, sharp knife cut out spoon shapes. Spray each piece with oil spray and lay onto a metal Chinese soup spoon. Bake for 15 minutes at 180°C until golden and crisp. Cool and fill with the following toppings: Diced rockmelon, prosciutto and shredded basil. Drizzle with balsamic glaze.

Rare roast beef and hot mustard cream (hot English mustard mixed into sour cream).

Parmesan onion cream: Combine 3/4 cup finely chopped onion, 1/3 cup grated parmesan, 2 tbs mayonnaise, 1 tbs sour cream and 1/4 tsp ground paprika in a bowl. Note: You can also cut out 4cm rounds from rolled sliced bread. Spray with oil, press into patty pans and bake until golden.
