  • 3tablespoons extra virgin olive oil
  • 1 white onion, finely chopped
  • 4 cloves garlic, finely chopped
  • 1 cup white wine
  • 1 can crushed tomatoes
  • 1tablespoons oregano, chopped
  • 1/2 cup parsley, chopped
  • 1 chilli, diced
  • 1 pinch salt (to taste)
  • 1 pinch pepper (to taste)

Method

Step 1 of 5

Open the pack of Boston Bay cooked mussels and strain out the water.

Step 2 of 5

Heat olive oil in large pan over medium heat. Add the onion, chilli and garlic and cook until translucent.

Step 3 of 5

Stir in wine, crushed tomatoes, parsley, salt and pepper. Allow to cook for 2-3 minutes.

Step 4 of 5

Next, add the mussels to the pan and cover with lid. Allow to cook for another 2-3 minutes.

Step 5 of 5

Remove mussels from heat. Transfer mussels to a large serving bowl or dish. Coat the mussels with the sauce and sprinkle with freshly chopped parsley and then serve.
