Description
Whip up this scrumptious batch of mint slice brownie to satisfy the cravings during a night in.
Method
Step 1 of 3
Grease a 3cm-deep, 16x26cm slice pan. Line base and sides with baking paper, extending paper 2cm above edge on all sides.
Step 2 of 3
Place butter, chocolate and sugar in a large microwave-safe bowl. Microwave on high for 1 minute, stirring halfway through with a metal spoon, or until chocolate is melted and smooth. Allow to cool for 10 minutes.
Step 3 of 3
Preheat oven to 180°C/160°C fan-forced. Whisk eggs into chocolate mixture, then flours. Spoon half of the mixture into the prepared pan and spread out evenly. Top with biscuits in a single layer. Spoon over remaining mixture and spread out evenly. Bake for 25 minutes or until a skewer inserted in the centre comes out with crumbs clinging. Cool completely in pan. Cut into pieces. Serve.
