  • 140grams Woolworths choc cream biscuits
  • 50grams unsalted butter, melted
  • 1L mint choc-chip ice-cream, softened
  • 200grams mint dark chocolate, roughly chopped
  • 1 cup thickened cream

Description

Making an impressive, triple-layered choc-mint ice-cream slice is easy with this recipe. Try our hack with softened ice-cream and make this dessert today.

Method

Step 1 of 6

Grease and line base and sides of a 20cm square (6cm deep) cake pan with baking paper, extending paper 2cm above the edges of pan.

Step 2 of 6

Place biscuits in a food processor and process until they resemble fine breadcrumbs. Add butter and process until combined. Using back of a metal spoon, press mixture over base to compact. Freeze for 15 minutes or until firm.

Step 3 of 6

Spoon ice-cream into biscuit case. Smooth top. Freeze for 2 hours or until firm and set.

Step 4 of 6

Place chocolate in a medium heatproof bowl. Bring cream to a simmer in a small saucepan over medium heat. Pour cream over chocolate and stand for 5 minutes. Stir until smooth. Set aside for 5 minutes to cool slightly.

Pour chocolate mixture over slice and spread to cover. Freeze for 2 hours or until firm and set.

Step 6 of 6

Using a warm knife, cut slice into bars and serve.
