  • 4teaspoons dried instant yeast
  • 3 1/2 cup plain flour
  • 1teaspoons mixed spice
  • 3/4 cup dark choc bits
  • 40grams butter, melted
  • 150grams white chocolate, melted
  • 1/2 cup cocoa
  • 2tablespoons marmalade, warmed
  • 1 cup buttermilk, warmed
  • 2 eggs
  • 1/2 cup caster sugar

Method

Step 1 of 5

Sift flour and cocoa into a large bowl. Stir in choc bits, sugar, yeast and spice. Make a well in the centre. Whisk buttermilk, butter and eggs together in a jug. Pour into flour mix and stir well until combined.

Turn out onto a floured benchtop. Knead for 5 minutes or until smooth. Lightly coat dough with flour and place into a clean, dry bowl. Cover with plastic and set aside in a warm place for 30 minutes or until doubled in size.

Punch dough down to its original size. Knead on a lightly floured benchtop for 1 minute or until smooth. Divide into 12 even pieces and shape each into a ball. Place into a roasting pan lined with baking paper, spaced 1cm apart. Cover with plastic and set aside for 30 minutes or until risen. Preheat oven to 190°C.

Remove plastic from buns and bake for 20-25 minutes or until golden and cooked through. Brush with marmalade and leave until dry.

Step 5 of 5

Meanwhile, place melted chocolate into a small snap lock bag and snip off one corner. Pipe crosses onto buns. Serve warm.
