  • 1/2 cup plain flour
  • 180grams unsalted butter (cooled slightly)
  • 1 3/4 cup icing sugar mixture (save 1 tsp for dusting)
  • 1 cup almond meal
  • 1 1/2tablespoons matcha tea powder
  • 6 free-range egg whites
  • 1/2 cup pistachios (chopped)

Method

Step 1 of 3

Preheat oven to 200°C. Lightly grease a 12-hole friand tin. Sift icing sugar, flour and matcha together into a bowl. Reserve 2 tbs pistachios and stir remaining into flour mixture with almond meal.

Using an electric whisk, lightly whisk egg whites in a large bowl until frothy.

Step 3 of 3

Stir dry ingredients and butter into egg whites until well combined. Divide mixture evenly between friand holes and place onto a tray. Scatter with reserved pistachios. Bake for 18-20 minutes or until golden at the edges and a skewer inserted into centres comes out clean. Cool in tin on a wire rack for 10 minutes, then turn out onto rack to cool completely. Serve dusted with extra icing sugar.
