- 1/2 cup plain flour
- 1/2 cup cornflour
- 2tablespoons icing sugar (save 1 tbs for dusting)
- 20 lychees, peeled, stone removed
- 2tablespoons shredded coconut, toasted
- 1teaspoons lemon, rind grated
- 150grams cream cheese, softened
- 1 egg yolk
- 1L vegetable oil (for deep frying)
- 1 cup soda water, chilled
Method
Step 1 of 5
Beat cream cheese, icing sugar and lemon rind together until smooth. Stir in coconut. Using a teaspoon, fill each lychee with cream-cheese mixture. Place on a tray and repeat with remainder. Cover and refrigerate for 1 hour or until firm.

Whisk egg yolk in a large bowl to loosen. Whisk in soda water. Add both flours and, using a fork, roughly stir until just combined when lumps will be visible.

Heat oil in a deep saucepan or deep-fryer.

Place extra flour in a shallow bowl. Toss chilled lychees in flour to lightly coat, shaking off excess. Dip in batter and allow the excess to drip off. Cook, in batches of about 6 at a time, for 2 minutes, turning halfway through until pale golden in colour. Drain on a paper towel.

Stand for 2 minutes before serving dusted with icing sugar.
