  • 5 free range eggs
  • 1 cup self-raising flour
  • 375grams zucchini, coarsely grated
  • 1 brown onion, finely chopped
  • 1 cup Woolworths shredded tasty cheese
  • 1/4 cup vegetable oil
  • 2tablespoons maple syrup
  • 30grams baby rocket leaves (to serve)
  • 1/4 cup tomato relish (to serve)

Description

This zucchini slice topped with maple bacon has maximum flavour. Make it for dinner, take it on a picnic or bring it to work for lunch.

Method

Step 1 of 3

Preheat oven to 200°C/180°C fan-forced. Grease a 20 x 30cm (3.5cm deep) pan. Line base and sides with baking paper, extending paper 3cm above sides.

Step 2 of 3

Reserve 10 bacon slices, then finely chop remainder. Whisk eggs in a large bowl. Add flour, then whisk until smooth. Stir in zucchini, onion, cheese, oil and chopped bacon. Season with pepper. Pour into pan.

Step 3 of 3

Arrange reserved bacon, slightly overlapping, over zucchini mixture. Brush bacon with syrup. Bake for 40 minutes or until bacon is golden and slice is cooked through. Slice. Serve with rocket and relish.
