  • 1 packet beansprouts
  • 1 stem spring onions
  • 1-2 chilies
  • 500grams lean mince beef
  • 1 large onion
  • 1 carrot, grated
  • 3tablespoons curry powder (good quality)
  • 2tablespoons garlic, crushed
  • 2 eggs, beaten
  • 1 packet filo pastry
  • 2tablespoons quality soy sauce
  • 1tablespoons quality oyster sauce

Description

This is my take a traditional Arabian Peninsula and Southeast Asia dish - easiest ever.
Instruction tip
With soy sauce, oyster sauce and curry powder, always go for a quality product. It will make a real difference to your meal. e.g. with oyster sauce, look for at least 30% oyster extract (some - even expensive ones - have as little .5%).

Method

Step 1 of 7

I used to love buying these at Asian food fairs and always wanted to have a go at making my own. And when I did I was pleased with the outcome, and not just because it's very much cheaper to make than to buy.

Finely chop the onion. Cry for about 20 seconds and wash your eyes

Saute the chopped onion for about 2 minutes. Add the grated carrot and continue for another 2 minutes, until the onion is translucent. Mix all the cooked ingredients thoroughly.

Mix the mince steak with the curry powder. Stir in the soy sauce, oyster sauce and garlic. Optionally, add chilies. Cook the mix for a few minutes. TIP: If you have a large pan, you can cook the mince on one side and the onion and carrot on the other at the same time

Making the pastry is normally the hardest part, but I use filo pastry, and it is very similar. Lay out two layers of filo pastry, one on top of the other. Repeat until you have 6 sets. With a large pastry brush or similar, brush beaten egg thickly on each upper layer

Divide the cooked ingredients between the six prepared pastries. Optionally sprinkle with beansprouts and/or chopped spring onions.

Step 7 of 7

Flatten the mix and then fold the pastry up into a parcel (please see photo at the top). Fry in the pan in just a light film of olive oil for 2 minutes per side.
