  • 1tablespoons capers, rinsed, chopped
  • 1 lemon, rind finely grated (cut into wedges)
  • 500grams marinara mix, coarsely chopped
  • 1 egg, lightly whisked
  • 1 1/2 cup panko breadcrumbs
  • 120grams leafy salad mix (to serve)
  • 1/4 cup vegetable oil (to shallow-fry)
  • 2tablespoons whole egg mayonnaise (plus extra to serve)

Method

Step 1 of 2

Combine marinara mix, breadcrumbs, mayonnaise, spring onion, parsley, capers, lemon rind and egg in a bowl. Shape into small patties. Place on a baking tray lined with baking paper. Chill for 30 minutes.

Step 2 of 2

Heat oil in a frying pan over medium heat. Cook patties, in batches, for 4–5 minutes each side until golden. Serve with green salad, extra mayonnaise and lemon wedges.
