- 1/4 cup fresh basil, torn (or shredded)
- 1 medium sweet potato, sliced into thin chips
- 2 medium tomatoes, thinly sliced
- 1/4 cup tomato sauce
- 1 lemon, cut into wedges
- green salad (to serve)
- 1 cup baby spinach leaves
- 425grams frozen crumbed fish fillets
- 1/2 cup mozzarella, shredded
Method
Step 1 of 3
Preheat oven to 180°C. Bake fish fillets and sweet potato for 20 minutes or until cooked. When almost ready, top three fish fillets with mozzarella and return to oven. Remove when cheese is melted.
Step 2 of 3
To assemble, place spinach leaves, basil and tomatoes on each of the fillets with melted cheese. Top with tomato sauce then remaining fillets.
Step 3 of 3
Wrap slider in baking paper. Serve with lemon wedge, sweet potato chips and green salad.
