  • 1 large mango, stoned, peeled and sliced
  • 1/4 red onion, thinly sliced
  • 2tablespoons olive oil
  • 1/2 lime, juice only
  • 1/2 red chilli, finely chopped
  • 1 handful coriander, finely chopped
  • 500grams tuna, cut into large chunks
  • 1/2 shallot, finely chopped
  • 1tablespoons soy sauce
  • 4 ciabatta rolls, split
  • 1 pinch salt
  • 1 pinch pepper

Method

Step 1 of 3

Toss together the mango, onion, 1 tablespoon of the oil, lime juice, chilli and coriander and set aside.

Step 2 of 3

Place the tuna in a food processor with the shallot and soy sauce. Briefly pulse until the mixture just comes together but isn't pureed. Lightly wet your hands, then shape into 4 burgers.

Step 3 of 3

Heat a griddle pan until smoking hot. Season the burgers and brush all over with the remaining oil. Cook the burgers on the pan for 1-2 minutes on each side, or until browned but still rare inside. Toast the ciabatta halves, then place a spoonful of mango salsa inside. Top with the burgers and serve.
