- 2 cloves garlic, crushed
- 4 spring onions, cut into 3cm lengths
- 1/2teaspoons dried chilli flakes
- 1teaspoons dried oregano
- 1 lemon
- 1/4 cup olive oil
- 1tablespoons rosemary leaves, chopped
- 600grams chicken thigh fillets, cut into 2cm pieces
- 1 1/2 cup seedless white grapes

Method
Step 1 of 3
Finely grate lemon rind into a bowl. Add in oil, garlic, rosemary, oregano and chilli. Add chicken, stirring well to coat. Marinate for 30 minutes or overnight if time permits.

Alternately thread chicken, grapes and spring onion onto eight skewers (use metal skewers or bamboo ones that have been soaked in water to prevent burning). Preheat a chargrill or barbecue on medium-high heat. Cook skewers for 6-8 minutes, turning until golden and cooked through.
Step 3 of 3
Meanwhile, cut grated lemon into wedges. Transfer skewers to a platter and serve with lemon wedges.
