Lemon Babka Cake

10 Ingredients
- 100grams butter
- 1 cup castor suger
- 2 eggs
- 2 cups flour
- 1 cup greek yoghurt
- 1/2 cup icing sugar
- 3tablespoons lemon juice and zest
- 2teaspoons yeast
- 1teaspoons baking powder
- 1/2 cup sultanas
Description
Babka means grandmother in Polish.
It's traditionally eaten at Easter but is lovely at any time with a coffee. It's a bread / cake without any kneading.
Method
Step 1 of 8
Put sultanas in bowl of warm water. Leave to one side.
Step 2 of 8
Mix butter and castor sugar until smooth. Then fold in eggs one at a time, followed by 1/2 cup yoghurt, 2 tbs lemon juice and zest. Then stir in baking soda,yeast and flour.
Step 3 of 8
Drain sultanas and add to mix.
Step 4 of 8
Rest in warm place for 30 minutes.
Step 5 of 8
Pour into greased tray or bundt pan. Spread evenly.
Step 6 of 8
Bake 50-55 minutes at 180c.

Whilst baking make icing. Mix icing sugar and remaining yoghurt and lemon juice.
Step 8 of 8
When cooked remove from bundt pan and pour icing over top.
Can add slivered almonds or chopped nuts.
