  • 1 1/4 cup dates, chopped
  • 3/4 cup water, boiling
  • 250grams butter, softened
  • 2 cups self raising flour
  • 1 cup dark brown sugar
  • 4 eggs
  • 2teaspoons mixed spice
  • 2teaspoons vanilla extract
  • 2 royal gala apples
  • 1/2 cup cream
  • 200grams jersey caramels
  • 1/2teaspoons sea salt flakes

Method

Step 1 of 4

Preheat oven to 180°C. Grease and line a 20x30cm baking tray with baking paper. Place dates and boiling water into a bowl. Set aside for 5 minutes.

Step 2 of 4

Place butter, flour, sugar, eggs, vanilla, and mixed spice into a food processor. Process until ingredients are smooth and well combined. Add date mixture and pulse to mix through. Transfer mixture to prepared tray.

Step 3 of 4

Quarter the apples and remove cores. Slice thinly and arrange, overlapping rows on top of the cake mixture. Bake for 45 minutes or until cooked when tested with a skewer. Cool in tray.

Step 4 of 4

Place cream, caramels, sugar and salt flakes into a saucepan. Stir over low heat until melted and smooth. Cut cake into squares and serve drizzled with caramel sauce. Note: Vanilla extract is different to vanilla essence. The difference between light and dark brown sugar is the amount of molasses that each contain. Light brown sugar has less molasses per volume of sugar whilst dark brown sugar has more.
