- 1 cup plain flour
- 1 cup self-raising flour
- 1/3 cup pure icing sugar, sifted
- 175grams butter, chopped (save 25g soft butter)
- 1/2teaspoons vanilla extract
- 250grams raspberries
- 180grams dark chocolate
- 125grams cream cheese, room temperature
- 1/4 cup cocoa
- 85grams fudge chunks
- 2 eggs, lightly whisked
- 1 cup brown sugar

Method
Step 1 of 3
Preheat oven to 180°C. Line a 18x28cm shallow pan with baking paper. Melt butter and chocolate in a medium pan over low heat until smooth. Stir in sugar and set aside for 5 minutes to cool slightly.
Step 2 of 3
Stir egg and fudge chunks into chocolate mixture. Sift flours and cocoa together and stir in to thoroughly combine. Spread evenly into pan and bake for 25 minutes or until cooked. Cool.
Step 3 of 3
Meanwhile, beat cream cheese, butter, sugar and vanilla together until creamy. Cut brownie into 8 x 7cm rounds. Top half of the rounds with filling. Top with raspberries and repeat layers, finishing with raspberries. Dust with icing sugar, to serve.
